Mezzaluna

Mezzaluna means ‘half moon,’ and here you feel like you could just about reach out and touch it. On the 65th floor of State Tower, Mezzaluna is the crown jewel of our vertical destination. With double-height windows surrounding the crescent-shaped dining room, each table offers the best views in Bangkok—not to mention its fine food. It’s all enough to leave you moonstruck.

Tokoyama Shuzo

Founded in 1804 in the heart of Fukui City, Tokoyama Shuzo has spent over 220 years perfecting its signature style of tanrei-jūjun – sake that is light yet full-bodied, crafted from 100% locally grown Fukui rice in close partnership with regional farmers. Under Shinpei’s leadership, the brewery continues to honor tradition while bringing a contemporary spirit to the world of sake.

9th Generation: Shinpei Tokoyama

Born January 30, 1985. After graduating from Kwansei Gakuin University with a degree in Economics, he joined Ozeki Co., Ltd., a major sake manufacturer, where he spent four years in sales at the Tokyo office — gaining experience in a market entirely different from the craft sake world.

He joined Tokoyama Sake Brewery in 2011, the year of the Great East Japan Earthquake. In 2014, he was appointed Head of Production. Working through a period of trial and error, he painstakingly established the brewery's brewing methods. In 2017, he carried out a major renovation of the production facility, and the following year received a Gold Award at the National New Sake Competition (Zenkoku Shinshu Kanpyōkai). He assumed the role of Representative in 2022. He continues to pursue a style of sake-making that could only be achieved through "JŌZAN" — a brand that embodies the spirit of Fukui's land and culture.

A Night of Flavors, A Celebration of Craft

Mezzaluna by lebua and Jōzan Sake share one belief – that true craft is never finished. On Thursday, July 2nd, 2026, Mezzaluna by lebua welcomes Shinpei Tokoyama-san, 9th Generation Master Brewer and CEO of Tokoyama Shuzo, travelling from Fukui, Japan, to pair his sake with Chef Ryuki’s creation.
