Their story began more than two decades ago in the kitchens of Four Seasons Hotel George V in Paris, where Chef Vincent Thierry served as Sous Chef and Chef Stéphanie Le Quellec began her professional journey as a young Commis.

Today, their paths converge once more as the chefs behind two two-MICHELIN-starred restaurants.

Chef's Table by lebua

Located on the 61st floor of lebua Bangkok, Chef’s Table by lebua is a two-MICHELIN-starred restaurant that places the kitchen at the heart of the dining experience.

The open kitchen and its centrepiece Molteni stove invite guests to witness each course taking shape. Contemporary French cuisine, seasonal ingredients and carefully sourced produce are presented against panoramic views of Bangkok, framed by Carrara marble and champagne-bronze details.

Chef’s Table by lebua also received Thailand’s first MICHELIN Guide Service Award in 2021 and was recognised with the award again in 2024.

Chef Vincent Thierry is the chef behind two-MICHELIN-starred Chef’s Table by lebua, where classical French foundations meet precision, creativity and a profound respect for exceptional ingredients. His culinary philosophy is guided by the belief that true luxury lies in simplicity. Seasonal produce sourced from Thailand is complemented by carefully selected ingredients from around the world, creating cuisine that remains distinctly French while connected to its setting in Bangkok. Born into a family with generations of culinary tradition, she entered culinary school at 14 before beginning her professional career in some of France’s most distinguished kitchens. Her journey has taken her from the George V in Paris to Provence and Hôtel Prince de Galles, where she earned two MICHELIN stars.

In 2019, Chef Stéphanie opened La Scène. Awarded two MICHELIN stars within four months, the restaurant remains the heart of her culinary world—a place where French technique, Mediterranean influences, simplicity and elegance come together to create emotion for every guest.
